The optimal pH range for sourdough is rather narrow (3.9-4.2 pH), so high accuracy is required to avoid unpleasant surprises during proofing. The HALO2 – HI9810382 pH-meter for semi-solid products is equipped with a pH electrode designed specifically for bread and dough, featuring conical tip, open junction and food-grade PVDF body.

Integrated lines for crackers and laminated biscuits

Each line is characterized by the following processing steps: Preparation of the dough; fermentation or stasis (in the case of some crackers or semi-hard biscuits); formation of the dough; its sheeting with reduction of the thickness of the final sheet; cutting; baking and cooling before packaging.

Salty crackers have a much more aerated and crispy structure than the classic dry biscuits, and have a longer and more complex fermentation phase. The lamination phase is crucial: from a coarse sheet created by a 3 or 4-roll extruder, a continuous sheet of dough, even a few tenths of a millimetre thick, is obtained through continuous calibration. It is here that the weight of the biscuit is decided and very high precision is indispensable in order to obtain constant and equal products.

Sophisticated electronic control systems analyze and correct the density of the dough to form the sheet, and then automatically adjust the speed of gauge rolls and the belts. A badly laid or non-constant sheet will give a remarkable product diversity after baking. This technology allows to sheet up to 20 layers of dough.

Radio frequency dryers for bakery products

Aries isRF Systems’radio-frequency response for bakery products: it increases the shelf-life and cuts processing costs. These dryers have been specially developed to remove excess moisture from food substrates in just a few minutes.

The RF technology is particularly suitable for the post-baking drying of baked products (biscuits, crackers, crispbread, wafers, rusks, etc..). In fact, the moisture reduction is a difficult task to achieve in conventional baking ovens due to the crust formation during baking, the surface browning and the high processing costs.

Radio frequency, on the other hand, is selective towards water and ensures drying and levelling in minutes, with no surface over-baking or excessive coloring. It also reduces the feared “checking” phenomenon. Among the key benefits of radio-frequency drying there are: higher product quality; easy integration in any production line; increase in production and cutting of processing costs; accurate process control.

This optical analyzer provides fast, continuous and stable measurement for concentration of a liquid component directly in the process stream. It is used in a variety of processes including evaporation and drying, total solids and product identification. The refractometer can be interfaced directly, or it can be connected to a Vaisala Indigo 520 transmitter.

WHY AN X-RAY CHECK ON THE RAW MATERIAL IS NECESSARY

Despite the controls that manufacturers may require of their suppliers, there is no tangible guarantee of the absence ofcontaminants in the product flow that is about to start the process phase. Self-priming pumps

TheRBSself-priming pumps of the A Series are monobloc machines with a stellar impeller made from precision cast AISI 316L stainless steel and electro-polished surfaces.

Their design favours washing and maintenance operations; they have symmetrical vertical mouths that allow perfectly reversible operation, independent pump shaft supported by a robust bearing installed in the body to replace only the electric motor when needed.

The mechanical seals are suitable for food contact (Moca) and there are no welds. Inspection and maintenance interventions are facilitated by the convenient front clamp, which allows to operate on the pump without affecting the connected piping.

It is frequently used in CIP washing circuits and in the transfer of clean liquids such as milk and serum even at high temperatures, but also for syrups, oils, vinegar, beer and liqueurs.

The series consists of three models with hourly capacities from 7 to over 21 m3, DIN 11851 connections from 32 to 50. Model 50AE in the photo is equipped with a brushed stainless steel cover to protect the engine and a tripod with adjustable feet for resting on the ground.
