With natural ingredients derived from milk, naturally occurring adjuvants, the selection of native lactic bacteria and the use of the Mediterranean production tradition, the final consumer is more protected and guaranteed.

Moreover, numerous technologies developed by the Italian company allow to reach internationally recognized quality levels. Salimix LG is a white granular powder ideal for the mineral salts balance of all the typical liquids in which cheeses are maintained (mozzarella, some fresh cheeses, Feta).

By achieving the correct pH value, surface defects such as yellowing, softening, peeling, and pulping can be avoided. Even Salimix RIC is a hygroscopic white granular powder, ideal for the mineral salts balance of whey and/or milk to produce whey cheeses, such as ricotta. Thanks to this processing aid, a delicate and perfect ricotta flocculation is obtained, respecting the soft structure, with a general improvement of the yield.

High-temperature sterilization

The large upper collector allows for a large steam chamber. Other technical features are: two bands of evaporator tubes; one superheater to eliminate traces of water in the steam; electrical control panel complete with touchscreen, with remote surveillance and assistance; total yield 90% and beyond with heat recovery; steam concentration 0.97; testing and exemption at construction site according to Ispsel standard.

Its use allows the regeneration of the brine, ensuring the elimination of pathogens and organic compounds, with considerable water savings and the preservation of the original recipe of the product. It autonomously manages the filtration and regeneration cycles of membranes – maximising their technical life and keeping negligible the presence of chlorides in the drains of the counter-washes – and automatically performs sanitization operations.

Thanks to these features, it ensures constant brine quality, regardless of the microbiological load coming in, while keeping energy consumption low. Idrosafe Brine is available for the treatment of flow rates up to 7.5 m3/h and is equipped with a remote-usable HMI panel, which can be combined with the main management systems on the market.

Ricotta cheese dryers

The ricotta drying plant developed byTred Technologyis available in two versions: Eco Min/F, with capacity of 45 cheese forms; Eco Evo/F, with capacity of 75 forms. The system consists of a stainless-steel processing chamber and a painted sheet metal exterior with hinged door.

The incoming and exhaust air is treated via adequately sized wall openings with diffusers that ensure its homogeneous distribution. The treatment with dehumidified air allows processing at low temperatures (from 10°C upwards), while maintaining the organoleptic properties of the ricotta cheese and reducing the drying time.

Continuous replacement of the process air preserves the product freshness. The PLC allows setting of three steps of temperature and duration of the work cycle, to be able to work any product, and to store recipes.

The intelligent beam evaluation with object tracking allows the devices to operate reliably and avoid unnecessary shutdowns, even in demanding environments.

Production of jam and marmalade, ganache creams, and toppings

The operation is very simple: just pour the ingredients of the recipe into the bowl and seal it tightly. The robot starts its cycle that includes one or more of the following functions: cooking, concentration, cutting, mixing, homogenising.

For heating the robot does not require a steam generator, because it uses electromagnetic induction, allowing energy savings and ease of use. For the concentration phase it uses the vacuum generated by a liquid ring pump, while for cutting and mixing it uses different types of blades and tools mounted on the main shaft. The emulsifying head and the scraper mounted on the cover shaft are used to emulsify. Production volumes range from 4 to 210 l/cycle.
